Virgin Lime and Peach Bellini’s

When my parents came in town this weekend they brought us so many peaches. I love peaches so using them before they go bad wasn’t an issue, but I didn’t want to use them only for tarts and a cobbler. I love peach desserts, but I wanted to mix things up a little and try something else.

After school Travis and I took Harper on a walk in the 185°(not an exaggeration, I thought I was going to melt) Atlanta heat. When we got home I wanted something more than water and eyeing the peaches and limes on the table gave me an idea. BELLINI’S!

Hers and His Bellini's

We had a bottle of un-opened sparkling cider left over from Thanksgiving so it was perfect timing to use it up. I know it seems gross, but the expiration date wasn’t until 2013 so we’re good. Having that late of a date is a bit more scary. Oh well! 

I added some lime juice and zest and that added a little something to really jazz it up! When you “jazz” things up that means it’s really worth trying;)

The Bellini’s were really simple to make and would be a great dessert drink if you don’t want to bake. We had it as our appetizer before dinner because we didn’t want to wait. We love our sugars!

I have to admit, I’ve never had a virgin bellini, but I’ve had a “regular” peach bellini. Those are soooo good! I bet hte virgin version is even more refreshing!

I’m not a fan of peaches… but love bellinis… go figure! ahaha I must try this!
