Super Easy Turkey Meatballs

August 19, 2011

This little one has been a ball of energy the past few days.

I just wanna play and chew!

No matter how many runs, walks, or games of fetch we play she is still on full tilt. So yesterday we knew the only way to really get her energy out was a day of play time with friends.

A nice long day at Doggy Day Care

I have to admit when we got Harper as a pup we thought day care for dogs was a little ridiculous and a waste of money. But it’s the best $22 we can spend occasionally when we’re busy. She gets great socialization and we don’t have to feel guilty if we have plans for that night and can’t take her on a good walk.

I had my Thursday night BodyPump and Travis had back-to-back softball games so we knew day care was the best thing for her. And it’s air-conditioned so she was a super tuckered pup when we picked her up.

After my BodyPump class I returned home to an empty house and usually go for an easy dinner like a protein shake and popcorn or something really simple when it’s dinner for one. But last night I was in the mood to cook.

As part of the Foodbuzz Tastemaker program Bird’s Eye had sent me some of their new Lightly Sauced products to try. I had bought some ground turkey and thought the Mushroom and Green Bean Risotto would be great with Turkey Meatballs.

I was pleasantly surprised at how the risotto turned out. I was afraid it was going to be mushy, but it was really good and went well with the turkey meatballs. Plus, the risotto only took 5 minutes to make so my meal was made in less than 20 minutes!

I have a few more to try and will share with you what I end up making. So when these sides come out in September you can try them too!

I just took my dog over to doggy daycare this morning! I work from home, so while technically it’s not necessary, it’s good for him and me! He goes once a week (Fridays) so he can socialize and play and I can get some work done in peace. He comes home stinky, exhausted, and happy. More than worth the money!

Murphy will chase other dogs at the dog park, but he’s sort of a loner at the doggie hotel/daycare. The one that we go to has a webcam and he’s always lying in the corner by himself.
