Last night after class I finally got my run in after two days of stormy weather.
Travis and I ran to Decatur to get yogurt then walked back. In total it was about 6 1/2 miles(half running half walking) which doesn’t seem like a lot, but it was 95° and humid so we were both pretty tired!
All that exercise worked up our appetites and I was in the mood for Mexican. To be fair I’m always in the mood for Mexican, it’s my favorite!
I decided to make a modified version of Emily’s Mexican quinoa with some extra veggies I had on hand. We added a cheese quesedilla to the mix since we were both so hungry!
This is a picture of Travis’ plate with Mexican quinoa, cheese quesedilla, and salsa verde! My plate was thrown together and not very pretty.
The meal was so good that I made the same as leftovers to take to class tonight! YUM!
Speaking of class…This weekend is finals and I can’t believe we’re already done with our first module(there are 5 in total)! I’ve learned so much and there is so much more to learn!
I admit I’ve not shared too much of my knowledge, but that’s only because I didn’t want to give false information. Now that we’re done with the first round I’m more confident and ready to spill the beans!
I’ve been working on some posts that will be super informative and I’m really excited to share with you! A few topics include:
- How to tell your skin type
- Best products for your skin type
- What’s in your cosmetics and how to read labels
- SPF 101
- Vlog on Bronzer
- etc
If you would like any skin care specific posts please let me know, I’m all ears and happy to share!
You can e-mail me at Girlyeverafter {at} gmail {dot} com or just post a comment!

Your Mexican meal looks delish! I’m excited to hear all about your skincare knowledge! I’ve been using BareMinerals lately and I’m really liking it! Hope you’re having a great Monday, chica!
I used to use Bare Minerals too and I just swtiched to Bobbi Brown for more coverage.
I ran this morning and it was already ridiculously hot and humid! Ugh.
Can’t wait for the skin care posts! As an athlete, I have a problem with back-acne around my sport bra area and lower back. I’d love to see a post on skin care tips for those who sweat on the daily.
That is a great idea! I’ll keep that in mind! So many ideas already, Thanks Laura!
I strongly believe that sharing is caring double H. So, next time you make something delish.. share. kthxbye.
haha I will, Boots! Share and care!
I can’t wait for the skin posts to come soon
