I have eaten my weight in berries over the past few days. It’s the season for berries which means they’re on sale and I can buy tons for way less. This also means that I must eat them pretty fast to avoid fuzzy berries, but that’s no biggie for this household;)
After BodyPump I made my normal smoothie with frozen berries and had it out of my trusty Mason jar.
Speaking of mason jars, this weekend I saw the absolute CUTEST glasses made out of Mason and Ball jars. Great gift idea.
Now back to my eats.
I was busy doing laundry and misc. things around the house the remainder of the morning before work so I was really hungry around 11:30 and decided to go ahead and have lunch.
Open faced egg salad on Ezekiel topped with avocado with a side of brussel sprouts, broccoli, and cherry tomatoes.
This wore off sooner than I thought, but I had packed a snack/lunch to hold me over at work until I got home for dinner.
I usually make more, but I made this when I was full from lunch so I didn’t think I would have a big appetite. Wrong! Once 4pm hit I was really hungry, but the fruit and nuts held me over until I got home.
My dinner was cereal with blueberries. It’s not the best, but Travis didn’t get home until after me so we ate separately and I needed something fast.
My plans for the remainder of the night was to bake bread so I didn’t want to spend a ton of time making dinner and eating too late. It was around 8:30 when I started baking my Gluten-Free Orange Blueberry Loaf and turns out baking that late after a busy day isn’t a good idea.
It’s not awful, but it needs some tweaking for sure. It tastes more like an orange flavored corn bread with blueberries and that’s not what I was going for at all.
The upside is that smothering a warm slice of this bread with strawberry rhubarb jam makes it taste a lot better;) But doesn’t everything!
I’m not giving up yet and next time I’ll start way earlier in the day rather than an hour before bedtime. That’s just crazy!
