My posts have been all over the place recently with no talk of recipes or workouts, skin or anything “girly”, but I assure you that will change. Now that it’s Fall I plan on doing a lot more cooking, more sharing of my workouts and training for races I plan on signing up for, and beauty tips and tricks I find helpful and easy.
As far as food goes, my meals lately have kinda been eh. I started each morning with a piece of ezekiel bread and jam with coffee the past few weeks.
I had become so bored of having a boiled egg or peanut butter and couldn’t get motivated to make anything in the morning. Lunches and dinners weren’t the best either, but after our 7 mile run this past weekend I had a great turkey and ham sandwich with a plum that I devoured.
It made up for the other lunches I had earlier in the week, but made me realize I was definitely in a food funk. Sunday when I was making the weekly meal/shopping list I vowed to make homemade meals a priority to get out of the funk and look forward to meals rather than slapping things together.
With list in hand we went to the Farmer’s Market and got a TON of food to last the week full of meals I had planned and extra fruits and veggies for snacks. It ended up being a lot more food for way less than if I had not made a list beforehand.
A few of the meals that have come out of this pile are:
Sausage and Apple with Green Beans
Sauteed Brussel Sprouts, Peppers and Onions(great for wraps or as a side)
Breakfast Porridge with Peaches, Peanut Butter, and a touch of Brown Sugar
And a super yummy Red Lentil and Spinach soup that I haven’t taken a picture of to share, but will be making again to share in a post.
It’s so easy to get in a food funk but making meal plans and shopping lists are my favorite. I look forward to different meal ideas, searching online for recipes, and making a fool proof shopping list that will save me money because I planned ahead.
