After work yesterday it was so beautiful that I knew I had to take advantage and go run. This spring weather has been unpredictable so when it’s nice I jump on any chance I get to be outside.
Harper and I did a good 2 mile run to the dog park where she got to play with lots of friends. I was hoping to run the 1.5 miles back, but she wasn’t having it so we walked. Luckily it was all up hill so I got my glute workout for sure!
I was super tired after the run. The heat in Atlanta can really kick your behind if you’re not careful. Humidity is the WORST, but I drank a huge nalgene and cooled off before cooking dinner.
I roasted some asparagus, broccoli, and a green pepper in the oven while I poached some eggs. Added some cheese to have on Arnold’s Thins, and dinner was done.
Sorry for the blurry pic, too hungry to try to focus.
Dinner was so good, I think this will be a repeater. Simple and done in less than 30 minutes! I love having easy cooking nights!
