How cliché would it be for me to say that ever since the weather got colder I’ve thought about soup?

And how cliché would it be for me to tell you that I love nothing more than a cold day eating soup with my favorite book under a blanket?

I’m not cliche so you won’t hear me say those things. If it’s cold and overcast the last thing I want to do is read. I’ll just fall asleep if I’m warm under a blanket.

But I did make this soup when it was cold, but not becauseit was cold. Two very different things.

Chunky Tomato and Zucchini Soup

I thought about making this soup after having it at Whole Foods one day. I really loved it, but don’t love the idea of spending $5 every time I want it when I can make it me self for less.

It’s way better than Campbell’s and healthier too since you’re controlling the sodium.

Make it when you want soup, not because you feel you have to due to the weather;)

Chunky Tomato and Zucchini Soup

Chunky Tomato and Zucchini Soup(adapted from Food and Wine)

  • 1/4 cup plus 2 tablespoons extra-virgin olive oil
  • 1 onion, finely chopped
  • 1 zucchini, chopped
  • 3 tablespoons tomato paste
  • Salt and freshly ground pepper
  • 4 cups water
  • Two 28-ounce cans peeled Italian tomatoes—drained and finely chopped, juices reserved

In a large soup pot, heat the olive oil. Add the onion and zucchini and cook over moderately high heat, stirring occasionally, until the vegetables are softened, about 8 minutes. Stir in the tomato paste and season with salt and pepper. Cook, stirring, for 5 minutes. Add the water and the tomatoes and their juices and bring to a boil. Simmer the soup over moderate heat, stirring occasionally, until the liquid is reduced by one-third, about 30 minutes.

Transfer half of the soup to a blender and puree until smooth. Return the puree to the pot. ENJOY!

I agree!!! Last night was my bookclub and we had tortilla soup…it was perfect!

This soup looks so good! I love soup – I probably make it every 10 days from November til March!
