Banana Carrot Breakfast Bars

This morning Travis and I took Harper on our normal running route and it was the perfect way to jump back in our routine. After our run and working on some arm moves I was glad to be back in the swing of things.

I love having a few relaxing days off and spending some QT with family, but sometimes I need my normal schedule. I do at least.

I keep having to remind myself that it’s Wednesday and not Monday so my week is really going to be off. I have a lot on my “to do” list so it’s going to be an interesting couple of days.

Since we got in late last night and didn’t have time to go to the store I opted for a Banana Carrot breakfast bar I had made a couple of days ago. Luckily they were still good.

Banana Carrot Breakfast Bar

They are really good and not super sweet. I had some cottage cheese on the side and it was YUM!

You must try these for a quick breakfast, they are super good!

Banana Carrot Breakfast Bars

  • 3/4 cup all purpose flour
  • 3/4 cup brown sugar
  • 1 stick butter, softened
  • 1 egg
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 cup oats
  • 2 grated large carrots
  • 1 banana, mashed
  • 1/4 cup milk

Preheat the oven to 350.

In a large bowl, combine the flour, baking powder, cinnamon, salt and oats.

In another bowl mix butter and brown sugar until smooth and all incorporated. Add the egg and beat again until smooth. Pour in milk, slowly mixing. Add the dry ingredients, mashed banana, and grated carrots.

Pour batter in 8×8 inch pan and bake for 20-30 minutes.

Allow to cool before cutting squares. Should make 9 squares.

I would always be so upset when I had fruit going bad, but now it’s the perfect reason to bake!

Being away from your normal routine is bittersweet. I’m visiting my family right now and I love being here, but at the same time, it sometimes takes 3 or 4 days to get back to normalcy. Oh well – I know it’s worth it so I deal with it 🙂

Your breakfast bars just made me really hungry for some carrot cake. It looks delicious!! Thanks for sharing! 🙂

yea, you end up needing a vacation from your vacation to adjust everything back to normal.
