I’ve been on a roll this week. Two home cooked meals in a row? HOLY GEEZ! I made this frittata(recipe below) last night after looking in my fridge and noticing the crazy amount of eggs we had. It took me no time at all and was so delicious.
I don’t want to toot my own horn, but TOOT TOOT!!!!! I’m a FANTASTIC frittata maker. I used to be intimidated by them because I was afraid of over cooking, but they are so easy. If you like omelets and want to try something new you must try making a frittata.
I bought the new Justin Timberlake album and have been dancing to it ever since.
It didn’t get great reviews but I don’t give a SH–! I LOVE JT! Always have and always will. In my book there is only one Justin in the music industry that matters and it’s this guy. I’m sorry if I’ve offended any Bieber fans, but that kid is no JTim.
Another purchase I’m excited about is my new running outfit I ordered from Lululemon.
I’ve been stalking Fedex and it’s supposed to get here tomorrow and I’m so excited. I just love the shorts and how different they are from a solid color. If I look cute while working out it’s much more enjoyable. I know I’ll have to wait for the weather to warm up before taking these out for a spin, but it’s still fun knowing I have cute attire.

Asparagus and Ham Frittata(adapted from Whole Foods)
- 2 tablespoons extra virgin olive oil
- 3 tablespoons finely chopped onion
- 8 eggs
- 1 cup colby jack cheese
- 1 cup chopped ham
- 1 small bunch asparagus, cut into 1-inch pieces
Preheat oven to 400°F. In an oven-proof skillet on the stovetop, heat olive oil and sauté onion until barely softened. In a medium bowl, beat eggs then add cheese. Pour into hot pan. Top with ham and asparagus. Turn heat to low and cook 2—3 minutes to seal bottom. Place pan with frittata in oven and cook an additional 20 minutes or until puffed and barely set. Remove and cool slightly.
