All Organized

Work was so busy today that the last thing I wanted to do was go to a Pilates class. I ran this morning and sweat a good 1/2 gallon so I was good. But I knew I really would regret it if I didn’t go and just try it out so I went and turns out it was really good. Lots of core exercise which is one of my weaknesses, so I’ll for sure be going back.
I hated having to leave this face so soon after our walk, but it was only an hour. And Travis was coming home shortly.

After class I made dinner which was leftovers of last nights meal and it was even better the second time around.

Summer Quinoa w/ Poached Egg and Tomato Slices

Summer Quinoa(adapted from
  • 1 tablespoon extra-virgin olive oil
  • 1 bunch green onions, chopped
  • 3/4 teaspoons sea salt
  • 1 cup quinoa, well rinsed and drained
  • 2 cups water
  • 1/4 cup raisins
  • 1 lemon
  • 1 zucchini and 1 carrot, grated on box grater

To make the quinoa, heat the olive oil in a medium saucepan over medium heat. Add most of the green onions, a pinch of the salt, and cook until the onions soften, just a couple of minutes. Add the quinoa and cook, stirring occasionally, until the grains dry out and toast a bit, roughly another 3 minutes. Add the water, the raisins, the remaining salt; bring to a boil. Turn down heat and simmer, covered, until the water is absorbed and the quinoa is just cooked through 15 minutes.

While the quinoa is cooking zest the lemon, and squeeze 2 tablespoons of lemon juice into a small bowl.

When the quinoa is cooked, remove the pan from the heat. Stir in the zucchini, carrots, lemon juice and zest.

On days when the heat index is over 100 the last thing I want is a heavy meal. This quinoa concoction with poached egg and tomato slices on the side was a great meal and just enough to fill this girl up!
I had a project to tackle so I grabbed my fuzzy helper and got to it!
Last week I ordered some new makeup and thought now would be a good time to organize my makeup drawer which keeps getting more and more out of control. I have so much stuff that it’s gone way beyond organized chaos and is just chaos.
Luckily it didn’t take too long and I went from this:

Being organized will surely shave off some time in the morning now that I don’t have to hunt for things anymore. All my “everyday items” are in plain sight and everything else is nice and tucked away under the cabinet.
Now to find something else to organize. I’m on a roll!

Awww Harper is adorable!!! 🙂

I wish I had time to take my dog on like super long walks/jogs as well. Great job with all of the organization!!
